Classic recipe for iced fairy cakes

Ingredients:

  • 100g (1/2 cup) unsalted butter, softened

  • 100g (1/2 cup) caster sugar

  • 2 large eggs

  • 100g (3/4 cup) self-raising flour

  • 1 teaspoon vanilla extract

  • 2 tablespoons milk

For the icing:

  • 200g (1 1/2 cups) icing sugar

  • 2-3 tablespoons water

  • Food coloring (optional)

Instructions:

  1. Preheat the Oven:

  • Preheat your oven to 180°C (350°F). Line a fairy cake tin with paper cases.

  1. Prepare the Cake Batter:

  • In a mixing bowl, cream together the softened butter and caster sugar until pale and fluffy.

  1. Add Eggs and Vanilla:

  • Beat in the eggs, one at a time, then stir in the vanilla extract.

  1. Incorporate Flour:

  • Sift in the self-raising flour and gently fold into the mixture until well combined.

  1. Add Milk:

  • Stir in the milk to create a smooth batter. Be careful not to overmix.

  1. Fill the Cake Cases:

  • Spoon the cake mixture evenly into the paper cases, filling each one about two-thirds full.

  • Bake in the preheated oven for 12-15 minutes, or until the cakes are golden and spring back when lightly touched.

  • Remove the cakes from the oven and transfer them to a wire rack to cool completely.

  1. Prepare the Icing:

  • In a mixing bowl, sift the icing sugar and gradually add water, stirring until you have a smooth, thick icing. Add food colouring if desired.

  1. Ice the Cakes:

  • Once the cakes are completely cool, spoon the icing over the top of each cake, allowing it to drip down the sides.

  • Decorate with sprinkles or other decorations while the icing is still wet.
